For my research project, I need to analyze EEG recordings of at rest open eyes condition (there are event markers for eyes open and eyes closed throughout the recordings). Considering all this… how can I process the data for eyes open only ?

You probably want to import into Brainstorm the data segments corresponding to eyes open. After you review the raw data, you can use the options of the import tool to specify you want to import X seconds of recording after each eye open event marker. The duration of X seconds needs to be estimated by based on the minimum duration b/w consecutive eye-open and eye-closed events.
