I have a 2D layout with white background I can't change the color of channel labels. is there any way?

You can edit all the graphic properties of any figure by right-clicking on it > Figure > Matlab controls.
Select the arrow in the toolbar (button "Edit plot"), then select the objects you want to edit, right-click> Open property inspector.
From the property inspector, in the top row, you can show all the figure objects and select all the text objects at once (click on the first, shift+click on the last), then edit the color.
