I am trying to save a PSD graph for a presentation, but the resolution I get from using the "Save as image" function is poor. Is there any way to save the graph with better quality?

The resolution is the image size (number of pixels) divided by the printing size.
If you want to increase the resolution, maximize the size of the figure before taking your screen capture.
If you want to increase the size of the text or the lines in the images: right-click on the figure > Figure > Matlab controls / Plot edit toolbar. Select the items you want to edit and use the Matlab menus to modify them. In the File menu, the print menu gives also some options to add some global scaling for all the texts or lines, but I'm not familiar with it.
To make your screen captures on non-apple computers, you can also simply press ALT+PrintScreen and paste the image with Ctrl+V in any other application.
